Overnight Mixed Grains Porridge

This recipe is ridiculously simple and and excellent way to start the day off right! I sometimes struggle to eat breakfast because I get so busy with the kids and don't have time to prep something I want to eat for myself. This solves the question of "what's for breakfast?" for everyone. Just throw everything in the crockpot before you go to bed and in the morning you have a healthy, warm, & tasty breakfast ready and waiting for you.
I have a family of six so this is the right amount for us. If you have a smaller family you can easily freeze portion sizes of this and pull it out the night before to reheat in the morning.

Creamy Chicken Stew

This creamy stew is quick and easy. I made it on the spur of the moment and was pretty happy with the results. Makes great leftovers for lunches, as well!

Lemon Quinoa Salad

Flavorful dish that is full vitamins, minerals, veggies & whole grains. It is good warm when first made & also excellent cold the next day. It can be served as a side item or served over mixed greens or massaged kale for lunch.
It makes a lot and will last in the fridge 5-7 days, so you can change it up after a couple days and add tahini and some pepitas or sunflower seeds. You can add any number of veggies. There is a lot of wiggle room in this recipe to use what you have around!

Quinoa Breakfast Porridge

Tasty and easy way to start the day with a pretty healthy whole grain and protein breakfast.

Garbanzo Bean Salad with Cumin/Yogurt Dressing

Super fast salad to go with other meditarrean inspired items. Excellent with hummus, tabbouleh, and a green salad.

Stuffed Pasta Filling

I came up with this recipe to fullfill a craving I had for italian cheesy goodness.
The nutritional information for this recipe is broken down to the number of manicotti I was able to stuff. There were 14 in my box and I guessed that I could have filled at least 4 more.
This filling was very tasty and would make a great lasagna layer, stuffed shells, or even stuffed zucchini or eggplant parmesan! yum! : )
It isn't ooey and gooey, but it still fullfilled my craving! : )

Homemade Turkey Soup

I made this with a fresh stock I made from the carcass of a whole turkey breast. The stock makes ALL the difference! I used all nice fresh produce so I jarred 6 pints of thiswith my pressure canner to put in the pantry, because it was so yummy!

Gypsy Stew, version 1

This soup is excellent and INCREDIBLY versatile! I make this whenever I have a lot of veggies around. I also make this whenever a friend has a baby or someone needs me to bring them food for whatever reason, because it is never fail, full of nutrients, and makes enough to have lunch a couple of days myself! : )

Creamy Mashed Kohlrabi

This bulb is boiled and mashed with butter and milk. You can lower the fat content by using low fat dairy, if you want to.
This doesn't pass for mashed potatoes, but it's a good tasty alternative.

Almond Basil Pesto

This flavorful pesto has a little less cheese and as little oil as possible. Although Pesto is high in fat, it is mostly monounsaturated and a nice splurge if used sparingly! : )

Meatless Shepard's Pie

This is what I make for myself so that I can resist the one I make for the rest of the family. It is MUCH healthier, although still a fairly high calorie meal. It does take some time to prepare, but no more than to make my traditional recipe. I am able to make them both at the same time. : )

Kohlrabi Asian Slaw

I picked up a couple of Kohlrabi at our Farmer's Market. I had never used it before. I think that it tastes like a mixture between a broccoli stalk(which Ihappen to love) and a radish... but not spicy. It reminds me of Jicama as well. I made another ecipe I found, but liked this much better! I hope that you might too! : )

Green Hummus

This is a good way to use up some fresh spinach, and a fun twist on hummus. We use this as a dip with carrots, celery(any vegetable) really. We also use it as a condiment for veggie wraps, or a turkey sandwich. The skies the limit!

Millet, Apple, & Carrot Salad

This is a great salad to use as a side dish or as a snack or light lunch.

Butternut, Cauliflower, Lentil Soup

A luscious and filling vegetarian soup. I use homemade veggie stock, so I don't think the sodium level is correct, but couldn't find salt free stock.

Creamy Green Tofu Dressing

This is an amazing no oil dressing that can go on salads, sandwiches, over fish, chicken, pasta, rice, the skies the limit!
