Turn creamy canned soup into a hearty meal. Use frozen chicken preseasoned with Southwestern spices and canned enchilada sauce for satisfying flavor.
"Traditional Mexican Posole is served with shredded cabbage, lime wedges, avocado, onion, cilantro, and, of course, shredded cheese. Many Mexican markets have posole meat already chopped up for you. But a rotisserie chicken works great. I prefer hot enchilada sauce with salsa, but the regular kind will do."
This can be made with shredded pork, beef or chicken.

pour 2.5 cups hot water over, let set 5 minutes
Add 1 box Krusteaz or other brand muffin mix (any flavor) (12 serving size)
add 1.5 teaspoon baking powder
Makes 17 to 18 muffins Bake 350 15 to 20 minutes
Easy as can be - and a lighter and healthier choice than some dips. Only 87 calories per 1/4 cup serving. Served with baked tortilla chips (calories not included in recipe)
Tasty cake. Especially good for Thanksgiving.
Serve with a dollop of fat free cool whip.
