Jenny's Vegan Weeknight Black Eyed Peas and Greens

I do a sculpt class on Tues and Thurs and this is so easy to throw together when I get home at 7:20pm. If we use paper plates and the rice is precooked, it's eaten and cleaned up by 8:45 with only a cutting board, a knife, and one pot to wash. I shower and have an hour to veg out before bed.

Canned black eyed peas tossed with sauteed fresh kale, red onion, and garlic. Added water for juice and olive oil for body and fullness.
