Black eyed pea salad

This is a great pot-luck dish for a picnic. Lots of fiber and protein. I really love this with Tostito scoops, but you can also serve it on cucumber or other veggie slices, or small whole wheat crackers on the side.

Rice a Roni chicken & broccoli, no cheese

All the recipes I found had cheese. A cream of soup adds the moisture & smooth texture that usually is supplied by cheese. Use your favorite condensed cream of to flavor it up. To make it fancy, top with sliced almonds and brown slightly in the oven before serving.

Sheet Pan Sausage and Veggies

Mix it all together, toss it in the oven, 20 minutes later a great meal for 4-6 people

Chicken Stroganoff Nesco cooker recipe

A quick and delicious recipe. You can lighten it by using low fat sour cream & whole wheat noodles.

Primanti Brothers type cole slaw

You can probably make this with less oil than the recipe calls for, but it is really good. Original recipe called for vegetable oil instead.

this is a sweet salty vinegary cole slaw that is very refreshing. You can probably cut back on the oil by half. Original recipe called for vegetable oil, but I like olive oil better.

A savory side dish. Takes a few minutes but very worth it!

An easy protein to add to any meal, and the "secret ingredient" (mustard) makes it taste awesome!

Avocado and egg breakfast open-faced sandwich

Fresh guac and cooked eggs on toast- fast, delicious, great fiber and protein, and tastes good, too!

Bacon Shrimp Zoodles Scampi for two (modified from recipe)

This is shamefully quick, easy, delicious and very filling. A light and refreshing shrimp scampi that is still very satisfying as a "fancy" main dish. Not my recipe, but I "tweaked" the original a bit and it was so good I had to share it!

Waldorf Salad for 6

A slightly different version of a staple salad. Light and refreshing with just a little tang from the tart apples.

Broccoli Bacon Cranberry salad

Refreshing veggie salad that can serve as a main dish or a side. Keeps for about 3 days in fridge.

Black Bean & Corn Lime Salsa Salad

This is a quick throw-together that can be used as a heavy salsa dip, or a salady side dish. You could do it with rotel, but I like the extra flavors using Tostito's Splash of Lime Salsa (mild) instead.

I took a SparkPeople recipe, added an egg, used what I had and had the best, refreshing lunch ever.

When you have a sweet tooth and want to stay on track, here's a nice treat.

Pico de Gallo by Carbmonster

If you like pico, and a little heat, you'll love this one. For more heat don't take out the white part inside the jalapeno, or add more. Keeps in the fridge for about 5 days.

Steel cut oatmeal apple cinnamon cranberry cereal

This is a twist on another steel cut oatmeal recipe, but is cooked on the stove rather than slow cooker, and has cranberries and a little less apple. Makes 6 good, hearty breakfasts that satisfy the sweet tooth completely.

This makes a wonderful, decadent weekend morning breakfast.
