Delicious vegetarian chili that keeps well for a week. Can be made vegan if you use very dark, dairy-free chocolate.
Clean, peel and chop the apples and sweet potatoes. Put them in the crock of the slow cooker. Stir the 1/4 apple juice, brown sugar, cinnamon and nutmeg together. Pour over the apples and sweet potatoes, stirring to coat. Cook on high for about 3 hours.
Stir 1-2 Tbs. apple juice with 1 tsp. cornstarch. Stir into the sweet potatoes and apples in the slow cooker. Let it cook for another couple minutes then serve.
