This is a variation on Spanish Rice, created one day when I was out of rice. I used olive oil cooking spray, frozen chopped onions, and homemade bell pepper-basil noodles from Amish country.
For a quick cold-weather meal, nothing beats cornbread and chili. I generally use store-brand ingredients in the can that says 3.5 half-cup servings to the can. Actual nutritional information may vary slightly.
