Would be better if I added just a LIL less water, but the vitamix wouldn't blend it so I added a trickle of water two times to help it along
Beans in place of flour, bananas in place of sugar, these are low fat, no added sugar, low sugar & gluten free. Pretty low carb too, for having bananas in them.
From Southern-in-law's blog, originally not gluten free carrot cake, but there is 2 options.
I combined two recipes I found online, then decided to try it in the rice cooker.

Tried this recipe off Southern in-law.com. Turned out rather flat pieces, but very healthy and still REALLY good!
