Tajin (A Tunisian Quiche)

This is simple and healthy. In Tunisia it is made with either leftover chicken or tuna, leftover potatoes, and parsley. I've updated it for the ingredients I am likely to have on hand, and to decrease the fat content while increasing fiber and protein. This is also good at room temp, and my Tunisian friends have served it that way at picnics.

I first heard a version of this recipe on the Splendid Table podcast, but changed it to suit my family. It can be easily tweaked for your personal tastes. They recommended it with butter croutons, but my family prefers to dip french bread into it.

Chicken apple walnut salad with curry

A friend gave me this recipe. I lightened it up a bit. I like it in a pita for lunch with a few lettuce leaves.

This is a recipe my Aunt gave me when she was exploring new ways to get vegetables into her diet. I love it with chicken, she recommends it with potato pancakes.

Crock pot Italian Beef

This is easy to put together in the morning for a good meal at night. Serve with bread, rice, or just have it in a bowl with a side salad. Have leftovers on a roll for sandwiches the next day.
