Easy for weeknight dinner
Delicious, easy and with 1 cup whole wheat pasta and a salad, it makes a filling meal.
Quick one skillet dinner. Can be served with rice or pasta of without. Can use frozen chicken breasts if no time for defrosting, just increase chicken cooking time before adding other ingredients
Cooks in one pot in about 30-40 minutes. Great for a quick no-fuss meal or St. Patrick's Day in place of corned beef!
Combine all ingredients except cucumber, tomatoes, and mushrooms, adding these to the individual salad plates.
