This recipe is named such because it tastes just like Oyster Stew, but is prepared using eggplant instead of oysters.
This is a delicious breakfast on a hot summer day when you have no time for breakfast. Just grab and go! I bet even the kids would like it. Can keep refrigerated for up to 3-4 days depending on the type of fruit you decide to use in it. I use pint size mason jars.
I used just under 1.5 lbs tenders
I used imitation crab, and recipe is figured with that. Regular crab meat was not in my budget!
