Cucumber-Onion Ranch Salad

Simple, fast and refreshing salad made from cucumbers, grated onion and ranch dressing. My mom made this weekly in summer while I was growing up, I have made a few changes by reducing the amount of ranch she used and adding some reduced fat sour cream, and also adding fresh dill when I have on hand.

Buffalo Sloppy Joes

Lighter version of Rachael Ray's Buffalo Sloppy Joes, I use half the oil, only 1lb of meat (I think 2 is just way too much). I also left off the blue cheese and instead of eating them on a regular bun I use Arnold's Sanwhich thins (not included in calorie info)
