Lean beef patties
I like to cook a large batch of these in 3 oz portions and keep them in the fridge. They reheat well and quickly, and can be paired with veggies to make a quick and lean meal for lunch or dinner. Change up the seasonings to suit your tastes.
This is a tasty dish that goes well with rice or pasta. My kids even love it. You can use any color or combination of colors of bell peppers in any size--for the purposes of this recipe I had large red and yellow, but I have also used green and orange before. We serve this with a side of orzo pasta.
Prep time includes time to slice vegetables and sausage. Add other vegetables as desired.
This is a modified recipe. The original recipe calls for water, not chicken broth, and adds a teaspoon of salt, which I omit. Add other seasonings if desired. I often add black pepper and garlic powder to give it a little more flavor.
Note: The sodium content stated in the nutrional facts is not accurate given the fact that the beans are drained and rinsed before cooking.
