I was out of potatoes to make the crust so used frozen hash brown patties that I defrosted and shaped in the pan.
I add this to scrambled eggs and eat as is or put it in a burrito.

Much healthier than store bought.
This is a terrific breakfast dish. I like it with a fried egg on top.
The goat cheese gives it a little tang.
