Melting Moments

Soften butter to room temp. Preheat oven to 350 F. Combine dry ingredients and set aside. Blend softened butter in large bowl with mixer until smooth. Add dry ingredients and vanilla and beat until well mixed. If necessary chill dough for up to one hour for easier handling.

Breakfast Taco Breakfast Mixture

A make-ahead egg-hash brown-sausage mixture to reheat on a taco shell-I use large flour shells-in the microwave for a breakfast on the go.

Easy Vegetable Curry

Serve over rice or noodles and sprinkle fresh cilantro on top. Can also include some cashews or peanuts, but niether of those ingredients are included in nutritional calculation.

A quick easy lunch to make ahead and take to work, or evening meal for four. Full of fiber and protein, low in fat, and very filling. To make it truly vegetarian, substitute vegetable soup base, or broth in place of the chicken soup base, or water.
