This recipe is adapted from the Parmesan-Basil Rice Pilaf found in Cooking Light. I used light olive oil, fresh garlic, fat-free and lower sodium chicken broth, and removed the cheese for a lighter version. The nutritional information does not reflect the light olive oil or reduced sodium chicken broth. For an interesting flavor you can cut up green olives and toss them in or squeeze lemon juice over the top before serving.
