Over 1 cup, 2 servings vegetables in each serving.

Crock Pot Bean Stew

My kids love this thick and hearty stew. (You can call it soup if you like.) They don't even know they are eating black-eyed peas and lima beans! :) Served up with buttermilk biscuits and a glass of milk... Yum!

The extra cooking time on low allows the smaller beans to cook thoroughly. This lets them break down while on high and gives a deep color to the stew's liquid.

Poultry, Cranberry Chicken Bake

Sweet and savory one-dish meal that serves up 1/2 c veggie and 1/2 c fruit in each serving.
