Sour Cream Coconut Plum Desert

I have several bags of plums in my freezer picked from our plum tree last year and am experimenting with ways to use them. I've always loved sour cream pies so decided to try making this as a crustless, custard type desert using granulated Splenda instead of sugar and light sour cream to lower the calories.

Doris's Cream of Chicken Vegetable Soup

After having lunch with a friend I asked her to share her recipe for the yummy soup she served. She wrote the ingredients on a piece of paper but explained she doesn't use a recipe, just adds "the right amount" of each ingredient. I put this recipe together using her list and my knowledge of cooking.

Buttermilk Waffles

After looking at several recipes for waffles I decided to try combining and modifying my favorites to come up with a version using ingredients I usually have on hand and with a calorie count that would allow me to enjoy them guilt free. This is what I came up with.

Old Fashioned Potato Salad With a Little Added Zest

This is potato salad the old fashioned way, with onion, celery, egg and light mayonnaise. I use dill relish instead of sweet and add seasoned salt and a few dashes of tabasco for a little extra spice.

Amish Chicken Corn Soup

A Taste of Home recipe "FEATURED IN The Best Soup Recipes of 2019." I left out the 1/4 cup butter called for in the original recipe and substituted two 12 oz cans of Kirkland chicken instead of the 2 pounds shredded chicken breast called for to reduce the calorie count. The original recipe claimed 201 calories per serving, no idea why this one is different, especially with the changes I made.

THE BEST MOIST SWEET CORNBREAD

Original recipe from Food.com. Their recipe really is the best cornbread I've ever had so I tried some modifications to see if I could get the calorie count down. Substituted Splenda for sugar, 1 % milk for half and half and Brummel & Brown Buttery Spread for butter.

Low Calorie Holiday Recipes
Last October I needed hip replacement surgery, my doctor insisted I lose 24 pounds, and he only gave me 8 weeks to do it. We were entering the holiday season so I made low calorie versions of my traditional menu, my Thanksgiving day calories were 1240, I will continue with the same menu this year.
