You can use your protein bar pans, the bottom of muffin cups or muffin top pans. I used my Twinkie pan and it worked great. I added two more slices of bacon, two eggs and another ounce of sausage then doubled the whole thing. I also added garlic, spinach and mushrooms. I put them in baggies for my husband to take all week to work while he is doing the low carb diet. They warm up great but are also good cold according to him. For a diabetic diet you could reduce the fat and sodium by using turkey bacon and ground turkey sausage.

Donít let the name spook you, it is very similar to Huevos Rancheros. Play with the spices to suit your family and serve with crusty fresh bread or whole wheat tortillas. You could even make the tomato base the day before to make a fast, healthy breakfast. Honestly, this is the best new recipe Iíve tried all year!
