Turkey Veggie Meatloaf Cups

These were something I threw together in a pinch with stuff that was leftover in the fridge. It's really easy to make and really yummy. Even my picky eater Fiance was very happy, and he's always told me that he "hates" meatloaf!

Roasted Garlic "Mashed" Cauliflower

I've derived this recipe from a low-carb diet over the past several years. I find the flavors much more satisfying than potatoes. Enjoy!

You can also make this ahead of time and freeze it in individual portions.

Tomato Basil Soup

Similar to La Madeline but Homemade! And with about half the fat.
Makes 8 (1cup) servings

Season to taste.

Orange Balsamic Dressing for 1

Great with leftover Orange Crumbed Chicken breasts and sauteed portabello mushrooms over spinach. You can also add goat cheese or parmesan and maybe some orange sections!

Super Dooper Veggie Omelet

Made this for lunch but would be a great breakfast that gets in a lot of veggies!!!
