A family favorite-- esp. w/ a little sprinkling of cheese, a dollop of sour cream, maybe some tortilla chips on the side, or use a little to top a potato. I make a big 6-quart pot full because it freezes and defrosts beautifully.
Great way to get that creamy texture without the added creams or flour thickeners. The rice in this recipe helps to do that-- even if you're carb conscious it's a very minimal amount (2 tbsp. for the whole pot of soup). You can use any kind of dry, uncooked rice. I just had Arborio on hand but I've done it with plain long grain white and with brown rice. You can also use veggie broth instead of chicken broth if you want to make it vegan.
