This is a great soup for cold weather! Smoky sausage and chunky potato mashed in the pot make for a cozy dinner, perhaps with some crusty bread. Cooking spray and turkey sausage make it lower-calorie, and kale helps make it vitamin-rich! This is a recipe from the Joy of Cooking; the original recipe is for a soup called Caldo Verde, and it's properly made with a spicy sausage called chorizo. The first time I made it I couldn't find any chorizo so I made it with kielbasa (I was in the midwest!). It's delicious, but not exactly the real thing.
This is great as a dip for fruit or dressing on a fruit salad. I use apple juice, but nearly any fruit juice would taste great (but obviously would change the calories per serving). Also, I like this recipe because I can't stand the taste of artificial sweeteners. Despite the fact that the yogurt contains splenda, even sensitive people shouldn't be able to taste it.
