The Tropical Vegan Kitchen

If you don't mind extra calories a extra banana would really make it extra tasty!
This recipe can easily be made vegan by omitting the cheese or using a cheese substitute.
Serve with crusty bread and garnish with a sprinkle of chili powder, a drizzle of good olive oil, a dollop of fat free sour cream and some feta cheese, if desired. Celery is added late in the recipe to add crunch.
Unfortunately the canned beans give this recipe a lot of sodium, but it also makes it very quick and easy.
Yields 15 1 cup servings
