Italian bean soup. You can serve this with pasta, just be sure to measure your pasta and add it to the total. This recipes uses dried beans that have been soaked and boiled, then measured in cups. You can substitute any dried bean you like.
You can adjust the salt or add more garlic or lemon as desired.
This is a simplified, slimmed-down version of my traditional tomato sauce. If you are not counting calories, add more sausage and meatballs, plus maybe a splash of red wine!
This is an excellent and inexpensive stew that can be served over pasta or rice.

This recipe is for make-ahead frozen lunches. Makes 9 individual lunches that are frozen and taken out as you need them, then microwaved.
Serve this over steamed broccoli or Jasmine rice, but remember to add it to your tracker.
Make as many of these sandwiches as you can on a day off. Wrap sandwiches individually however you like, and freeze them. Put in your bag on your way to work, pop in the microwave for 30 seconds or until hot, and voila! You can also add cooked egg whites, but be sure to add the calories to the total.
