these pancakes are the perfect alternative to the traditional unhealthy options. Even my little boy loves them! We top them with cut up strawberries to make a delicious complete breakfast.
I got this recipe years ago from a co-worker, although absolutely delicious, was filled with fat and sugar, so I tweaked it a bit and am happy to find that it is still amazing.
Delicious, light cake. Great by itself for a breakfast treat or with a cream cheese frosting and walnuts for a traditional cake.
