Easy pasta recipe with a rich, sophisticated taste. Works well with linguini, fettucini, smaller pasta shapes such as rotini etc.

Stuffed Tomatoes and Peppers

A tasty and healthy vegetarian main dish, especially good for the late summer/fall when tomatoes and peppers are at their best. It works just as well without the cheese, if you want to keep the fat down. Serve with a salad on the side for a main meal.

Feel free to substitute vegetables (eg. squash) or different grains (eg. breadcrumbs), add nuts, different cheeses.... This recipe can stand a lot of variation in both contents and proportions.
