Meatless Breakfast Scramble

This recipe is good and it feeds a good amount of people. If I have it in, I use Lite Salt instead of regular salt. Sometimes I add mushrooms and/or some fresh tomatoes too.

Mashed Horseradish Cauliflower

This is a great low-fat, low-calorie, low-carb alternative to mashed potatoes. Its absolutely delicious! I use whipped butter because it has a bit less calories and less fat, but still tastes great. You can even make this ahead of time and heat when ready to eat.

Slow Cooked Southwest Chicken

This is an easy and delicious recipe and its filling too! I like to add a dollop of reduced fat or fat free sour cream.
