You can whip these up quick on Sunday, wrap tight in wax paper, freeze and have delicious breakfasts for a couple of weeks! Microwave on high for 30 seconds, flip it over and give it another 30 seconds. Delish!

Lentil & Brown Rice Taco Filling

This is one of my favorite, easy-peasy recipes! You can put it in a taco shell or wrap it in burrito or just eat it out of a bowl. You can add cheese and sour cream if you really want to go crazy!

White Chicken Enchiladas

Not going to tell you this is low-cal, low-fat- it's not, but it's delicious for a special dinner!

Easter Grass Slaw

A favorite at any time of the year! From Taste of Home magazine, but lightened up with light mayonnaise.

Real favorite at my house. Avoid the expensive, sodium-laden mix and make your own pilaf.

Lentils for Stagflation

First of all, I didn't even know what "Stagflation" was until I came across this recipe on! If you don't know, you now have an opportunity to learn a new word! I'm guessing it's an Indian dish because of the red lentils and the curry. I've made it a little healthier than the original version. It is very, very good! My 18 and 14 year old sons gobbled it up. Zesty Hominy and Cheese
