Easy, quick tofu with evoo and stewed tomatoes. Add fresh or frozen veggies for a filling. meal.
Easy homemade refried beans. I use beans boiled from scratch to reduce sodium, but you are welcome to repleace with canned beans. To limit sodium, try Mrs. Dash and herbs for spices and limited salt.

Super easy recipe I found online, will update this with the source when I find it! Just mix cake mix with chocolate tofu and bake according to package. Can be done as a cake as well, or freeze cupcakes for even better portion control!

To reduce sodium, lightly pulse fresh tomatoes with herbs instead of using diced tomatoes. Use PAM instead of EVOO, and limit salt.
1lb extra lean ground turkey
1 cup Nonfat Cottage Cheese
1 Egg
1/2 Cup Chopped Onion
1 Clove Garlic (chopped)
3/4 Cup Kraft 2% Shredded Cheddar Cheese
2 Tbsp Worcestershire Sauce
1/4 cup water
3/4 cup of Heart Smart Bisquick (mix only)
4 Slices of Tomato
sliced eggplant filled with zucchini, tomatoes, ground beef, jalapenos, honey, and chipotle pepper seasoning
