I came up with this playing around with leftovers from the Sparkpeople recipe "Curried Red Lentils with Brown Rice". What a great and easy dinner!
Great on it's own or as a starter to curry-fried rice.
Makes 7 1-cup servings.
Mildly tweaked by omitting olive oil and mozzerella, adding more black olives, as well as a jar of mushrooms.
Modified for a healthier, lowfat, sugarfree version, but every bit as great and moist as I remember!
