This is a lower calorie/sodium/fat version of McDonalds McMuffin. I like the turkey and sometimes substitute Turkey sausage. I also use Mrs Dash for a little extra flavor. You can make these ahead of time and freeze.
This is a great protein bar! So easy to make, I make two batches at a time and store them in the fridge in snack bags. They don't last very long!

I love Mexican food but there is the salt issue. Canned enchilada sauce has a gazillion mg. of sodium. So I use a corn tortilla (taste better to me) and just 3 tbs. of canned sauce. I now have a recipe for the sauce. Will make a new recipe then. This is good in a pinch.
I love enchiladas...but.there is too much salt in the canned sauce. You can add 1 teaspoon of salt to this or to your taste. This makes three cups.
I love liver! It is great with smothered, sliced red potatoes, grits, or mashed potatoes. Add some green beans and you're all set.
