Mock Chicken Almond

A super easy casserole, not especially healthy but you can make some easy substitutions to make it better (turkey sausage, or no sausage because it is optional)

I will continue to experiment with this recipe and update the recipe as I find healthier and tastier alternatives.

Watergate Salad

The ingredients might sound strange, but this stuff is delicious and great for potlucks, picnics, and holiday parties. Takes about 5 minutes to mix this together, or make it the night before and toss it in the fridge for even less stress on big cooking holidays.

There are a couple other recipes for watergate salad on the site, but none has cottage cheese, which in my opinion is necessary.

This dish is low in saturated fat, and I calculated it to be about 10 BIG servings. If you portion it out into smaller servings, it'll be even less calories.

I'm totally open to (and hoping for) suggestions on how to lower the sugar content of this dish.


I'll try making this with turkey in the future, but this is a combination of a few different meatloaf recipes I've run across.

Turkey & Veggie Lasagna

Black bean brownies

They don't taste beany, but they are almost like fudge. Might need even more baking powder. I also threw in a dash of cinnamon, and few drops of hazlenut syrup.

I did have one roommate say they tasted like refried beans, but that's only because I told him the ingredient list before he ate them. Everyone who I didn't mention the black beans too commented on how rich and yummy they were!

I will admit though, this recipe needs some more tweaking. Caloric values based on tiny brownies (I cut up my pan 5x5 for 25 brownies at less than 100 calories each, if you cut 4x4 and have 16 brownies they're closer to 150 each)


Not the healthiest, next time I'll make with low sodium, nonfat alternatives..
