Got tired of the expense and chemicals of Egg Beaters...just altered my recipe to use real eggs. Added a few yolks for flavor and texture. You can add more or less depending on personal preferences.

So easy to make and so delicious! The original recipe called for coating the dough with butter, but to save fat grams, I omit that.

This is the cocoa mix I grew up on except I substituted Splenda baking blend for the sugar. If you find this to be too sweet, just add more cocoa to the mix and then remember to cut back on the Splenda blend the next time you make it. You just need to find the right sugar/cocoa balance for your personal taste.
A light but filling pasta dish. Omit the chicken and serve as 8 side dishes instead of serving as a main dish. The lemon flavor is pretty intense, so don't make this if you don't like lemon.

My husband ate something similar on a trip to Munich. He searched the internet until he found a recipe that sounded like what he ate. After a few tries and a few alterations, this is what we came up with. Not a low fat meal, but hearty and satifying. Served with mashed potatoes it is a real winner. To accomdate the high fat, just plan out your meals for that day to give balance.

I got this recipe off of Food Network and made some changes to match our tastes. Mix it up to meet your needs...more or less arugula, add capers, decrease or increase the olives, change the type of olive you use....lots of variations possible.
