My husband Steve recently told me how much he loves Alfredo sauce - something not really healthy - so I decided to try to come up with a lower fat healthier version. I made it with lots of fresh ingredients and reduced fat sour cream, chili powder and capers for a little kick. I liked it and Steve loved it! I will definitely make it again.
I used leftover Salisbury Steak from my recipe "Easy Salisbury Steak" to make this soup. The soup could easily be made with other leftovers like pot roast, ham, hamburgers, meatloaf or it could also be made meatless but more seasoning would be required to boost the flavor.
I made this soup with leftover homemade salsa to approximate one of my favorites - chicken tortilla soup. It turned out great and made a hearty supper.
Being low on groceries and looking in fridge and pantry for something to cook led to this concoction. Turned out great! The main ingredient is the tomatoes. I love cooking with with petite diced tomatoes. This could be altered by changing the other veggies or the meat but it is essential to add the tomatoes and complimentary spices. The broth for this was terrific BUT after seeing it calculated with so much sodium, I would suggest using low sodium bouillon cubes. ; )
Yummy side dish made with layers of shredded zucchini, spinach leaves, reduced fat mozzarella and other good stuff.
