I got this idea from a internet newsletter. However the one in the newsletter just didn't appeal to me. I knew that JoAnna had a really good Mac Salad that started like Mac and Cheese. So here is my frankenrecipe were I pieced together Jo's awesome Mac Salad, and what I thought would make a really neat autumn comfort style Mac and Cheese dish.
JoAnna created Creamy Cheesecake for her daughter in law, Angie, last month I tried Olive Garden's pumpkin cheesecake, and knew I had to replicate this recipe. I know Angie's creamy cheesecake was just the place to start, and boy was I right! This is my adaption of that recipe to make a gloriously delicious yet healthy version of Olive Garden's pumpkin cheesecake.
A TOPS friend of mine in Long Island used to make this for every TOPS occasion, it was exceptionally delicious. But, she would never share the recipe. Here's my healthy version as best as I can come close to her's.

(My son Tommy told me this soup was easy for a college boy to fix--and tasted like a chicken pot pie.)

This is my grandmothers famous Nacho Casserole that I have made over "healthy". No easy feat! But, grandchildren for miles around came running when this was on the menu!
