Tweaking old recipe. Still too high in calories but low in sodium and pretty high on protein.
Tweaking up my granola bar recipe - NOT a "diabetic friendly" choice, but it's definitely a low-sodium choice!
This is by NO means a low-cal beverage, but it is SO yummy for the once or twice a year "feel good" treat.
Made in rice cooker. Was on a search for lower sodium "Herb & Butter Rice-a-roni" that I could make myself. This is what I came up with.
I use as LITTLE canned products as possible, and add NO SALT to my meals - we're watching hubby's high b/p - so YOU may opt to add salt, but all my meals are perfectly tasty once you break that sodium addiction. You can actually TASTE the veggies!
I use an electric skillet and crock-pot when having to live in hotel rooms for weeks on end, but you can use a stove top as well :0)
The only "canned" item I use is the tomato paste, and that is for thickening. My goal when I cook is to create traditional meals that are lower in sodium, and carbs and higher in protein than the original recipes.

I didn't have tomatoes to make Chicken Laredo, so came up with a tasty alternative!
Recipe from the back of the box, modified for extra fiber with flaxseed, and changed amount of milk & eggs, added spices.
This recipe is meant to be LOW SODIUM, therefore it will lack "taste" to those who haven't yet detoxed from that mineral. I cook with all FRESH, not canned, veggies.
A 2 cup serving will provide you with FOUR servings of veggies.
LOW sodium, HIGH protein!
Check that your chicken has 75 mg sodium/4 oz --- some have that "injected with natural chicken broth" which is really just salt water and can have 180 mg sodium/4 oz chicken!
I do NOT cook with salt, and once you become accustomed to cooking without salt, you will realize how different foods have SO much flavor!
Didn't turn out the way I wanted, but still tasted yummy! Gut sticking for sure!
Relatively high in sodium! NOT a dish to have on a regular basis. BUT it's quick and easy. (and still lower in sodium than a restaurant!!!)

Carnival Squash resembles the acorn squash in shape, but the outside is not nearly as green - it has orange and yellow stripes. It's raw form smells like raw pumpkin.
The goals for my recipes are LOW SODIUM, therefore rice etc has been cooked without anything added to them.
Low Fat - High Fiber - High Protein --- I used this as 'stage 3' for increasing fiber intake. Heart healthy recipe!
Low Fat - I take an entire bag of beans, soak them overnight, rinse them well and drain, then portion out into 2 cup containers, fill enough water to cover and freeze for easy prep later on.
