Organic Chicken Salad

I used all organic and local fruits and nuts for this recipe. This is so quick and easy to make and truly delicious! You can serve it on the traditional bed of mixed greens or put it on a whole wheat pita for lunch! The added tofu gives it a little more substance and fills you up more while adding the health benefits. It's a great way to get wary tofu eaters to try it!
