Use whatever vegetables you like or have on hand.
A yummy, moist coffee cake. I used traditional baking ingredients, but I think this could be made with substitutes without too much taste sacrifice. Try whole wheat flour, plain Greek yogurt, egg substitute or Splenda baking blend to reduce calories. Enjoy!
Makes a great topping for oatmeal, ice cream or yogurt.
This is a throw-together-whatever-I-had-on-hand type of pot pie. Normally, I would used mixed vegetables with carrots, peas and green beans. Put in whatever veggies you like - easy peasy and yummy!!
This recipe is a great filling for lettuce wraps or as just a stir-fry.
The taste of buffalo wings in a yummy, healthy burger! Serve with blue cheese dressing, iceberg lettuce and diced celery, with bun or without, yum!

DH and I used to buy the frozen version of this dish, and I tried recreating it at home - turned out so much better!
Of course, the usual substitutions can be made to make this healthier. Try omitting the flour and adding a little cornstarch to the sauce instead. Enjoy!
I always make this following a night of crockpot pulled pork because we have insane leftovers and it's delish! The chicken is optional to me, I just happened to have some on had and though why not. I leave out the traditional lima beans cause Hubby doesn't like them. Adjust seasoning to your taste as well - I like mine vinegar-y!
Yummy side dish for just about anything!
This is a yummy, spicy version of the classic shepherd's pie. There are many substitutions that can lower the calories and sodium to suit your needs/tastes. Using ground turkey, low-fat cheese and no salt added veggies are the easiest three I can think of. Also, I love Jiffy mix cornbread, but I'm sure there are healthier versions out there! Enjoy!
Just an easy stovetop chili, nothing fancy - spice measurements are approximate - I just dump stuff in and taste it :)
Recipe from Smucker's with my adjustments for taste. I use less sugar and baking pwder rather than soda. I also omit the salt in their recipe. I imagine any berry preserves would be delicious!
This is a quicker version of the traditional, using the veggies that my husband will eat. You can sub three cups (or more) of whatever veggies you like. Frozen mixed veggeies works great. You can lower calories and fat by using reduced-fat cheese
This is a great fat-free dip for fruit. I also like to spread on Angel Food Cake and put berries on top for 'Fruit Bruschetta' yum!
