Butter cream icing for decorating

This is not exactly a healthier version of icing but it is appropriate for decorating a very large birthday cake. This recipe will make about 9 cups or 72 2 tbs servings. It should be eaten in moderation and is actually ok if eaten in servings of two tablespoons which is average on a birthday cake. I first made swiss buttercream for the first time and discovered it was way toooo buttery for my tastebuds so I adapted it into my regular buttercream recipe and found it to be quite tasty.

White Cake

This is enough batter to make 12 cups. I am using this for my sons birthday cake which will be 11 by 14 cake pan. I will cut it into 2 by 1.5 peices to serve 45 people. This recipie came from I changed the sugar to slenda and used a low cal margarine. Made a small test batch and it came out good.
