Quick / healthy breakfast on the go.
Quick & easy way to serve up leftovers. I use frozen vegetables to use up the extra turkey once everything else is gone.
Tastes too good not to be bad. A perfect breakfast on the run, or divide it into 2 servings of snacks/deserts.
A much healthier, low fat version of fried zucchini. (Also great using Okra or Eggplant instead of Zucchini. Great layered with Marinara sauce and mozerella for a low cal eggplant parmasan.)
I use frozen vegetables to make this quick and easy. It's not only low cal & low fat, it makes itself!
One of her 30 minute meals. She made with Butter Nut couscous. Since this is too high in fat & calories, I've omitted from the nutritional information. I serve with plain couscous that I made with the chicken broth minus the nuts. The instructions have her version... I'll modify more for an even healthier choice.
