This recipe is a nice plum cake, from a 'Martha Stewart' LIVING magazine; apparently it's an old recipe of a family friend of the cooking editor.
I used olive oil, because it's covid quarantine time, and that's what I had on hand.
Can use any brand; these are what we had on hand
Use on noodles (good on soba (buckwheat)), vegetables, and protein

I threw this together fast for dinner since it was Asian New Year; I served with eggrolls for others or soup; some Japanese soba noodles, and a Lean Cuisine Sweet and Sour Korean Beef.
Super easy and quick soup to use up what you have on hand; can be blended into a bisque, but I preferred as a broth, since I opted to omit dairy; in this case, the squash functions as a faux pasta/grain, something to chew on, but vegetative ;)
This fast and easy, high protein bean casserole (can be vegan by omitting dairy cheese or using vegan cheese) Mexican vegetarian main dish (can be eaten as a side too) is made of pantry items; 3 cans of beans, a cute little can of green chilies, a jar of salsa, a can of ro-tel tomatoes, some corn tortillas, and some cheese.
Layer it all together & bake.
This is great to use up leftover chicken, maybe from a rotisserie chicken, along with pantry canned goods. Using the microwave makes it super fast. I *did* carmelize* onions, but could substitute salsa instead.
Authentic, classic, ukrainian-cheese pierogies, like Mama taught me to make; Big batches (5 pounds potatoes=80 ounces) for family Christmas dinners, but can be halved or quartered for a manageable amount for smaller occasions
Serve w/: sour cream, fried onions, bacon chunks, or sausage (kielbasa)
Alternate fillings: drained cottage cheese for the cheddar (w/ potatoes), or forget potatoes & do sauerkraut, or just cheese; OR blueberries, strawberries, etc.
Not super sweet, pretty healthy, easy! mainstream vegan cookies
Simple and quick to make, this soup is high in potassium, vitamin A, manganese, and folate, and some protein, this is a a good soup to use up some of your spice cabinet spices that are just sitting there; they can be swapped, omitted, switched out, etc.
