My friend brought delicious zucchini bread to a potluck and I asked for the recipe. I tweaked the recipe a bit, making it a TINY bit healthier by using half regular flour, half whole wheat (both unenriched and unbleached) and by replacing the vegetable oil with applesauce. It still tastes PHENOMENAL! This makes 2 8x4 loaves. Cut it in half and you get 1!
This is a delicious thick, creamy, chunky vegetable soup with a delicious, silky potato base. Mmm mmm! Use vegetable broth to make it veggie friendly =D
This recipe is for SIX large muffins. You could also make 12 normal-sized muffins at 143 calories a piece. Please note that they are high calorie because they have great, clean sources of fiber, complex carbs, and protein. There is no oil. They have nuts and flax instead! Yum, yum! To be eaten as a snack or a meal.
