Shannon's Autumn Veggie and Kielbasa Bake

As much I strive to eat clean, my guilty pleasure is kielbasa (my very favorite food growing up.) This dish was an experiment in throwing together the components of my favorite kielbasa dish with a lot more veggies with the objective of having a lighter main dish where the kielbasa adds just some incredible flavor, but isn't the star of the show. The result is a delicious and decadent tasting casserole in a generous main-dish portion.

Shannon's Greek Turkey Burgers

I love these with some Tzatziki sauce. (Don't forget to add your calories for your roll, if you use one, and any condiments.)

I make these on the stovetop, but you can grill them, too.

Shannon's Quick & Easy BBQ Chicken

This is my go-to dinner for night's when I just don't have a lot of time, and it's one of my husband's favorites. You can substitute boneless pork sirloin chops for the chicken. I like topping mine with some chopped dill pickle.

Shannon's Husband's Favorite Sauteed Veggies

My husband loves this colorful and flavorful combination, especially the slight heat from the crushed red pepper flakes. I entered the # of servings as 3, because we love huge heaping bowls of this, but it can easily enough serve 5 or 6 with smaller portions.

Valentine's Chocolate Cuppuccinos

For a sexy desert to share with your special someone, try this luscious dark mocha desert that's as as easy to make as any instant pudding mix. This recipe makes four small servings at less than 100 calories each, or two very generous helpings at still less than 190 calories. Dust the whipped topping with cocoa, cinnamon, or nutmeg for a special final touch.

Shannon's Gypsy Soup

Don't be intimidated by the number of ingredients or the prep and cooking times -- if you don't mind chopping a few vegetables, measuring, and opening a couple cans, then give it a shot! This is my favorite soup and so flavorful. It's great for leftovers. I make a batch and keep it in the fridge all week -- it gets even better after the first serving!
