This is the best pork tenderloin I have ever tasted! I experimented a bit with the ingredients to make it lower in fat, calories, carbs, and sugar. My family loves this and it is easy to make and is great to serve for a dinner party.

I didn't have any maple flakes so I substituted stevia and I didn't have 8 egg whites as specified, so I used 5 whites and Egg Beaters to make up the difference.
This is a recipe that I tweaked from the Oxygen magazine winter collectors issue.
This is a lightened up (lower fat, sugar free) version of an old classic with a few changes for the holidays. It has 1/2 lowfat mayo and 1/2 regular mayo to cut some of the fat. Instead of sugar, I subsituted splenda. For the holidays I substitute dried cranberries in place of raisins and substitute Lite Raspberry Pomegranate Vinaigrette Salad Dressing for some of the apple cider vinegar. This makes a very festive side dish which is great for a holiday brunch, luncheon or dinner.
