Vegan adaptation with an extra hit of protein but the taste of the original. An easy weeknight meal.
I tweaked and merged a couple recipes to come up with a great black eyed peas and collards dish perfect for New Years Day, and any weeknight.
A hearty version of miso soup. I used black soy beans in place of the traditional tofu and threw in a ton of veggies. Can easily change up the veggies to use up what you have on hand. A fast filling meal.
A high protein and high-fiber vegan-friendly tomato sauce with the heartiness of a meat sauce. Great over rice, pasta, or polenta. This makes a lot so if you don't want leftovers halve the recipe.
Ok anyone from the south will cringe at this recipe for gumbo, but it is super fast and quite tasty!

This recipe was originally for Cabbage Rolls but I decided to streamline and "healthify" it.
To make this dish a little healthier I sprinkle the noodles over top to give it a bit of crunch but use fewer noodles. The edamame provides a lot of protein in this vegetarian dish.
Kedgeree is a dish created by British colonies that combined curry with their much loved kippers. This version is super-quick, whole grain and surprisingly good.

A really awesome potato salad that is a great summer side dish. I subbed in cauliflower for half the potatoes to thin it down and added carrots for some color. The dressing here is also great for salads or as a marinade.
I like to mix a few higher cost "fun" cereals with cheap and healthier cereals to make a snack mix that is pleasing to both the kids and adults. Obviously you can adjust this in a wide variety of ways for your own tastes & needs.
A lovely and healthy version of Tuna Noodle Casserole. The green beans are different from most versions and work really well.
An unusual and simple pasta dish. The beans are cooked for a long time so that they can be twirled right with the pasta. The original recipe called for fresh tomatoes and beans but I streamlined it using canned tomatoes and frozen beans.
A mildly spicy chili sauce done in a Cinninati style with spaghetti noodles. I upped the veggie count here to make it healthier and they are barely noticable (except in the nutrition count!)
Easy and healthy muffins for morning or part of a light lunch or dinner.
Nice side or up the portion for a light meal. I like the edamame but you could use lima beans for a more traditional succotash.
Awesome comfort food that is simple and fast to make!

A great but light tuna casserole. This makes a lot but I like to have leftovers to eat during the week. Very family friendly!
