Banana Carrot Walnut Quick Bread

A little of this goes a long way. It isn't as low calorie as one might like, but it does have a lot of good things for you in it. As a treat every once in a while it is nice. It will also freeze well.

Whole Wheat chicken Lasagna

This is a twist on a Spark People Recipe for a Mexican Chicken. I made the Mexican Chicken recipe and then used the leftovers in this Lasagna. Unfortunately, I can't find the recipe I used! It had chicken breasts, taco seasoning, peppers, onions, and Picante sauce.

Salad Dressing for veg/fruit salad

This is a nice dressing to add to a tossed salad. I use several types of lettuce, spinach, broccoli, cauliflower, carrots, tomatoes, green peppers, bunching onions, black olives, almonds or walnuts, just whatever you want. I also put in grapes or strawberries, halved or sliced to add some more sweet to it. Top it off with a low-fat cheese, such as Mozzarella, maybe a little sliced deli meat and you have a meal in one for less than 500 calories.

Glazed Meatloaf

This is a meatloaf I made for the kids at camp and they loved it. It has a moistness that sets it apart from the others.
