A great dish for the family (my 3yr old loves it). This version is gluten free. Can substitute roasted/rotisserie chicken or ground turkey breast to lower the fat & calories. Great one-dish meal, and a great way to get a large serving of veggies.
I make this weekly, and usually top it with 0% greek yogurt for extra protein & taste (and too cool down the "spiciness")., It's perfect for lunches, dinners, and is also great to serve with tortilla chips
