Marlene Koch original recipe, re-done by myself
I modified a Marlen Koch Eat what you love recipe, and by calculations done here, reduced the calorie count to 99 per muffin, 2.3 grams of fat and 4 grams of protein per muffin. Just perfect a mid morning snack at work without hurting your diet!
Have to give credit to Marlene Koch for initial recipe. She is amazing. I just tweeked it for me to make it even a little higher in protein, but does add about 15 calories each. Still under 100!
If you like very moist muffins, this is the one for you!
As I love the pumpkin pie taste, I have tried a number of recipes to duplicate that, being high protein and still virtually fat free...no crust of course
