Just 4 ingredients and you have a tasty and healthy dinner to come home to!

Chicken in Artichoke Mushroom Wine Sauce, slow cooker

Pour these simple ingredients in the slow cooker and come home to a healthy and delicious dinner, nice enough for company. Serve over brown rice with a side of fruit or fresh vegetables and dinner is a snap.

Hummingbird Cake for the heart smart

A southern treat trimmed down a bit. If in a hurry, this can be made quickly in a 9x13 dish or even as cupcakes, but is traditionally a 3 layer cake. I use whole wheat flour, but regular flour makes a lighter cake. I haven't tried using splenda in the cake, but that is an option if you want to try cutting the calorie/carb count down. Hope you like it!

Key lime substitute

If you are looking for a key lime substitute that will keep you in your calorie range, this could be it. Don't even try this if you are avoiding fat free or artificial ingredients, because this is full of them. Those of you living in Florida will probably hate it too, but my landlocked family thinks it is a pretty good dessert and a large serving is just over 100 cals, so who can gripe about that!

A hearty breakfast muffin, low in fat, and high in flavor. Easy to make and freeze for a quick morning breakfast on the go.

Southwest salad-EASY!

Easy to make--just open the cans, mix together, and chill! Great for picnics. I use southwest flavored tomatoes, but other flavors or your own spices would be great as well. You can also add black olives, crushed tortilla chips, chopped peppers, cheese, etc as your calorie limit allows. My husband likes to add salt and spicy Mrs. Dash to his. This is a great base to start with and you can play around with the add-ins as you please. Makes 8 generous 1 cup servings.

Friatta in a Frenzy

I call it this because it is fast and easy to make with large servings of low fat, high protein deliciousness! I usually make it when I am in a hurry because it is so easy and uses ingredients I usually keep on hand.

Power Muffins

These low fat muffins will start your day off with loads of vitamins and calcium. They are filling, tasty, and the batter is supposed to last up to 6 weeks in the fridge, although mine is usually gone in a week!
