Borani (Eggplant with Yogurt Sauce)

Middle Eastern Recipe -
A medley of eggplant, yogurt, onions, garlic and herbs.

Spanakopita (Greek Spinach Pie)

This is an authentic, really rich pie stuffed with spinach, onions, cheeses and herbs that are all enfolded by crispy, flaky phyllo dough. (
>Note: Phyllo dough is a middle eastern flaky pastry, similar to puff pastry, but individual thin sheets (It's the same stuff used for the Greek dessert baklava). It can be found at most supermarkets in the frozen section near frozen pie crusts, frozen whipped topping, puff pastry, and frozen berries.

Crock Pot Chunky Vegetarian Chili Slow Cooker Recipe

Recipe from the Crock Pot website:
049 - Very tasty and very filling. I think 1.5 tbsp is too much chili powder, perhaps a misprint. I think it should be teaspoons instead.

Fried Rice

Yum! Tasted just like takeout. Tastes perfect with my Cream Cheese Wonton recipe!!

Cream Cheese Wontons

These cream cheese wontons taste just like the kind at the chinese buffet but I've substituted neufchatel for real cream cheese, and they're baked with non-stick cooking spray (I like Crisco Original 0-calorie spray in the blue spray can) instead of deep fried. Each wonton is only 34 calories! These are great for parties and your guests will think they're unhealthy they taste so good!

Veggie Pizza with a Kick!

The best veggie pizza you've ever had. The veggies are seasoned and sauteed before they go into the oven so that they don't taste like the bland veggie pizzas you get at the pizza parlour.

Very Good (1 rating)
Spaghetti Squash Stroganoff

Creamy stroganoff-like meal with turkey instead of beef and spaghetti squash instead of egg noodles. Surprisingly delicious!

Southwest Veggie Salad

Cool, crisp side dish with Corn, Black Beans, Jicama, Cilantro, and Fresh Basil.

Mango Mousse

A light, refreshing dessert that is super easy to make. Perfect for a hot summer day!
