Recipes I've Shared:
Modified from Mark Bittman's Split Pea Soup recipe. Simple, rich, great stats, and absolutely delicious.
This is a modification several similar recipes on here, but I haven't seen any this high in fiber, low in fat and cals, and BIG.
Home made waffles from Mark Bittman's "How to Cook Everything." Light and crispy, there's nothing like them. Totally worth the calories.
Tastes indulgent, but isn't.
Loaded with flavor and vitamins, this soup is great year round but best in the fall and winter when it's cold out. Serve at any temperature.
Moist, delicious, flavorful muffins that come together quickly and make a great breakfast. Swap out any other fruit sauce for applesauce; try canned pumpkin, mashed berries, canned butternut squash, mashed banana.
I accidentally made these without the butter and they were still edible, but nowhere near as delicious. Good to know that you can just leave it out and shave off 40 calories and 4g of fat per serving.
Yum. Not "light" but definitely lighter than anything you'd get at a restaurant or in the freezer aisle. Makes three very generous portions. Could easily stretch to feed 4. Leftovers are great served over wheat toast.
The easiest homemade bread ever. Super satisfying, easy to make. Originally from the NY Times.
Super filling and delicious
Super tasty and light meatballs. Great with pasta or in a chicken broth soup with veggies
Craving chinese? Make this and save a boatload of fat and calories. Feeds a crowd or stores really well in the fridge. Travels well, and is super flexible (reduce the soy for a lower sodium recipe, add shrimp or another meat, etc.) Met with RAVE reviews at a recent BBQ.
Awesome alternative to pricey, boring frozen veggie burgers. Don't be intimidated by the long ingredient list. These are worth it.
Crunchy satisfying treat
